
Vegan Quiche

Ingredients :
- 1 vegan pie crust
- 1 block 14 oz firm tofu, pressed
- 1 cup chopped asparagus
- 3 tablespoons nutritional yeast
- 1 teaspoon garlic powder
- ½ teaspoon turmeric optional, for color
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup unsweetened plant-based milk
Directions :
- Preheat your oven to 375°F (190°C). Pre-bake the pie crust for 5-7 minutes, then set aside.
- In a blender or food processor, combine pressed tofu, nutritional yeast, garlic powder, turmeric, salt, pepper, and plant-based milk. Blend until smooth.
- Stir the chopped asparagus into the tofu mixture, reserving a few pieces for garnish.
- Pour the filling into the pre-baked pie crust and smooth the top. Arrange the reserved asparagus pieces on top for decoration.
- Bake for 35-40 minutes, or until the filling is firm and lightly golden.
- Let the quiche cool for 10 minutes before slicing and serving.
