Vegan Asparagus Quiche is a flavorful and wholesome dish that’s perfect for any meal of the day. Made with a creamy tofu filling, fresh asparagus, and a flaky vegan crust, this quiche is both satisfying and nutritious. It’s dairy-free, egg-free, and packed with plant-based protein, making it a great option for vegans and anyone looking for a lighter, healthier version of traditional quiche.

Ingredients :

  • 1 vegan pie crust
  • 1 block 14 oz firm tofu, pressed
  • 1 cup chopped asparagus
  • 3 tablespoons nutritional yeast
  • 1 teaspoon garlic powder
  • ½ teaspoon turmeric optional, for color
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup unsweetened plant-based milk

Directions :

  1. Preheat your oven to 375°F (190°C). Pre-bake the pie crust for 5-7 minutes, then set aside.
  2. In a blender or food processor, combine pressed tofu, nutritional yeast, garlic powder, turmeric, salt, pepper, and plant-based milk. Blend until smooth.
  3. Stir the chopped asparagus into the tofu mixture, reserving a few pieces for garnish.
  4. Pour the filling into the pre-baked pie crust and smooth the top. Arrange the reserved asparagus pieces on top for decoration.
  5. Bake for 35-40 minutes, or until the filling is firm and lightly golden.
  6. Let the quiche cool for 10 minutes before slicing and serving.
