Tuscan Chicken

When you need a simple but delicious meal in under 30 minutes, this one-pan Tuscan chicken is the answer. With tender chicken cuts, vibrant spinach, and succulent sundried tomatoes swimming in a creamy sauce, this dish is fast, flavorful, and easy to make.

Ingredients :

  • 2 lb chicken breast boneless and skinless
  • ¼ cup mixed spices
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ¼ cup white onion diced
  • 1 tablespoon garlic minced
  • ½ cup sundried tomatoes
  • 2 cups baby spinach
  • 1 cup heavy cream
  • ¼ cup parmesan cheese

Directions :

  1. Coat your chicken breasts in the mixed spices.
  2. Heat olive oil in a large pan over medium-high heat.
  3. Add your chicken to the pan and brown on all sides. Remove from the pan and set aside.
  4. Reduce the heat to medium-low and melt butter in the pan. Add onions and saute until softened. Add garlic, then saute until aromatic.
  5. Add sundried tomatoes, spinach, heavy cream, and parmesan cheese. Stir to incorporate.
  6. Bring the sauce to a gentle boil and add the chicken back into the pan.
  7. Cover the pan with a lid and simmer for 10-15 minutes.
  8. Serve with a sprinkling of parmesan cheese, and enjoy!
