
Taco Casserole
In less than 30 minutes, you can have this delicious taco casserole on the table ready to feed any hungry diners.
Ingredients :
- 1 tablespoon olive oil
- ⅓ cup red onion finely diced
- ⅓ cup red bell peppers finely diced
- ⅓ cup corn
- 1 pound ground beef
- 2 tablespoons chili flakes
- 1 tablespoon garlic powder
- 1 ½ tablespoons ground cumin
- 1-2 teaspoons salt to taste
- 1-2 teaspoons black pepper to taste
- 14 ounces diced tomatoes
- 14 ounces black beans
- ¼ cup chicken broth
- 1 ½ tablespoons lemon juice
- ¼ cup fresh cilantro chopped
- 1 package tortillas
- 2 cups mozzarella cheese shredded
Directions :
- Place a pot over medium-high heat. Once the pot is hot, add the oil, followed by the onions, peppers, and corn. Cook until the veggies have softened and the onion is opaque.
- Add ground beef to the pan. Once the meat is browned, add chili flakes, garlic powder, ground cumin, salt, and pepper to taste. Stir to incorporate.
- Stir in diced tomatoes, black beans, chicken broth, lemon juice, and cilantro, bring to a low boil, then remove from heat and set aside.
- Place a layer of tortillas along the bottom of a greased casserole dish.
- Top it with the ground beef mixture, followed by the shredded cheese.
- Bake for 20 minutes at 357F.
- Serve with a sprinkle of fresh cilantro, and enjoy
