Taco Casserole

In less than 30 minutes, you can have this delicious taco casserole on the table ready to feed any hungry diners.

Ingredients :

  • 1 tablespoon olive oil
  • ⅓ cup red onion finely diced
  • ⅓ cup red bell peppers finely diced
  • ⅓ cup corn
  • 1 pound ground beef
  • 2 tablespoons chili flakes
  • 1 tablespoon garlic powder
  • 1 ½ tablespoons ground cumin
  • 1-2 teaspoons salt to taste
  • 1-2 teaspoons black pepper to taste
  • 14 ounces diced tomatoes
  • 14 ounces black beans
  • ¼ cup chicken broth
  • 1 ½ tablespoons lemon juice
  • ¼ cup fresh cilantro chopped
  • 1 package tortillas
  • 2 cups mozzarella cheese shredded

Directions :

  1. Place a pot over medium-high heat. Once the pot is hot, add the oil, followed by the onions, peppers, and corn. Cook until the veggies have softened and the onion is opaque.
  2. Add ground beef to the pan. Once the meat is browned, add chili flakes, garlic powder, ground cumin, salt, and pepper to taste. Stir to incorporate.
  3. Stir in diced tomatoes, black beans, chicken broth, lemon juice, and cilantro, bring to a low boil, then remove from heat and set aside.
  4. Place a layer of tortillas along the bottom of a greased casserole dish.
  5. Top it with the ground beef mixture, followed by the shredded cheese.
  6. Bake for 20 minutes at 357F.
  7. Serve with a sprinkle of fresh cilantro, and enjoy
