Sweet Potato Pancakes

Ingredients :

  • 2 cups mashed sweet potatoes cooked and cooled
  • 1 cup flour
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon cinnamon
  • 1 tablespoon sugar optional
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract optional
  • Butter or oil for cooking

Directions :

  1. In a large bowl, mix the mashed sweet potatoes, eggs, and milk until smooth.
  2. In another bowl, combine the flour, cinnamon, sugar (if using), baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the vanilla extract if using.
  4. Heat a non-stick skillet over medium heat and add a bit of butter or oil.
  5. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.
  7. Serve warm with your favorite toppings.
