
Spinach Stuffed Chicken Breasts

Ingredients :
- 4 boneless skinless chicken breasts
- 2 cups fresh spinach or 1 cup frozen, thawed, and drained
- 4 oz cream cheese softened
- ½ cup shredded mozzarella cheese
- 2 garlic cloves minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika optional, for color
- 1 tablespoon olive oil
Directions :
- Preheat your oven to 375°F (190°C). Grease a baking dish or line it with parchment paper.
- In a bowl, mix spinach, cream cheese, mozzarella cheese, and minced garlic until well combined.
- Using a sharp knife, carefully cut a pocket into the side of each chicken breast. Stuff each pocket with the spinach mixture.
- Season the outside of the chicken breasts with salt, pepper, and paprika. Secure the openings with toothpicks if needed.
- Heat olive oil in a skillet over medium heat. Sear the stuffed chicken breasts for 2-3 minutes per side until golden brown.
- Transfer the chicken to the prepared baking dish and bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes before serving.
