  • 2-3 lb London broil top round steak
  • 1 cup beef broth
  • 1 medium onion sliced

  • 2 tablespoons olive oil for searing
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • 1 tablespoon cornstarch optional, for thickening

Directions :

  1. Heat olive oil in a skillet over medium-high heat. Sear the London broil on both sides until browned, about 3 minutes per side. Transfer to the slow cooker.
  2. Add the sliced onions and garlic to the slow cooker, spreading them over the meat.
  3. In a bowl, mix beef broth, soy sauce, thyme, and black pepper. Pour the mixture over the meat.
  4. Cover and cook on low for 7–8 hours or on high for 4–5 hours, until the meat is tender.
  5. Remove the meat and let it rest for 10 minutes before slicing.
  6. Optional: To thicken the sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water. Stir into the slow cooker and cook on high for 5–10 minutes until thickened.
  7. Serve the sliced meat with the sauce and your favorite sides.
