
Slow Cooker Chuck Roast
Tender slow cooker chuck roast with potatoes, carrots, and a savory gravy. A comforting, hearty meal that’s easy to prepare and perfect for family dinners!
Ingredients :
- 3 –4 lb chuck roast
- 2 cups beef broth
- 1 medium onion sliced
- 4 large carrots cut into chunks
- 4 medium potatoes quartered
- 3 garlic cloves minced
- 1 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil for searing
Directions :
- Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 4–5 minutes per side.
- Place the sliced onions, carrots, and potatoes at the bottom of the slow cooker.
- Lay the seared chuck roast on top of the vegetables.
- In a small bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour over the roast and vegetables.
- Add minced garlic on top of the roast.
- Cover and cook on low for 8–10 hours or on high for 4–6 hours, until the roast is tender and easily shredded with a fork.
- Remove the roast and vegetables. Let the roast rest for 10 minutes before slicing or shredding. Serve with the vegetables and gravy from the slow cooker.
