Slow Cooker Chuck Roast

Tender slow cooker chuck roast with potatoes, carrots, and a savory gravy. A comforting, hearty meal that’s easy to prepare and perfect for family dinners!

Ingredients :

  • 3 –4 lb chuck roast
  • 2 cups beef broth
  • 1 medium onion sliced
  • 4 large carrots cut into chunks
  • 4 medium potatoes quartered
  • 3 garlic cloves minced
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil for searing

Directions :

  1. Heat olive oil in a skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 4–5 minutes per side.
  2. Place the sliced onions, carrots, and potatoes at the bottom of the slow cooker.
  3. Lay the seared chuck roast on top of the vegetables.
  4. In a small bowl, mix beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour over the roast and vegetables.
  5. Add minced garlic on top of the roast.
  6. Cover and cook on low for 8–10 hours or on high for 4–6 hours, until the roast is tender and easily shredded with a fork.
  7. Remove the roast and vegetables. Let the roast rest for 10 minutes before slicing or shredding. Serve with the vegetables and gravy from the slow cooker.
