Shrimp Skewers in Oven

Ingredients :

  • 1 pound shrimp cleaned peeled, and uncooked
  • 1 teaspoon garlic minced
  • 2 teaspoons chipotle peppers diced
  • 1 teaspoon salt
  • 2 teaspoons chili powder
  • 1 teaspoon coriander
  • 1 teaspoon oregano
  • ½ teaspoon onion powder
  • ¼ cup olive oil
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 white onion chopped
  • 1 cup pineapple chunks
  • ½ lime

Directions :

  1. Add shrimp, garlic, chipotle peppers, salt, chili powder, coriander, oregano, onion powder, olive oil, bell peppers, and onion to a bowl. Toss to combine.
  2. Top with the juice of ½ a lime, and toss again.
  3. Begin alternating pieces of green pepper, red pepper, onion, pineapple, and shrimp on to your skewers. Place completed skewers on a greased baking pan.
  4. Bake shrimp skewers in oven for 8 minutes at 425F.
  5. Top with fresh herbs, serve, and enjoy
