
Shrimp Poke Bowl
This easy shrimp poke bowl is going to become one of your new go-to recipes because it's fast, healthy, and flavorful.
Ingredients :
- 1 pound shrimp peeled and deveined
- ½ teaspoon salt
- ¾ cup lime juice
- 1 jalapeno sliced
- 2 tablespoons olive oil
- ⅓ cup mayonnaise
- ½ tablespoon lime juice
- 1 teaspoon garlic powder
- ½ teaspoon sriracha
- ½ cup rice cooked
- ½ cup red cabbage shredded
- ½ cup cucumber sliced
- ½ cup mango cubed
- ½ cup edamame
- ½ cup carrot shredded
- ½ cup avocado cubed
- ¼ cup radish sliced
Directions :
- Add shrimp to a bowl and season with salt, lime juice, and jalapenos. Set aside to marinate.
- Add mayo, lime juice, garlic powder, and sriracha to a bowl and stir to combine.
- Heat the olive oil in a pan over medium-high heat.
- Remove the shrimp from the marinade and add it to the hot frying pan. Sear 2-3 minutes on each side until the shrimp turns pink.
- Add a layer of rice to the bottom of your bowl. Top it with red cabbage, cucumber edamame, mango, carrot, radish, and avocado.
- Top this quick poke bowl with the shrimp, serve with a drizzle of spicy mayo, and enjoy!
