Shrimp Poke Bowl

This easy shrimp poke bowl is going to become one of your new go-to recipes because it's fast, healthy, and flavorful.

Ingredients :

  • 1 pound shrimp peeled and deveined
  • ½ teaspoon salt
  • ¾ cup lime juice
  • 1 jalapeno sliced
  • 2 tablespoons olive oil
  • ⅓ cup mayonnaise
  • ½ tablespoon lime juice
  • 1 teaspoon garlic powder
  • ½ teaspoon sriracha
  • ½ cup rice cooked
  • ½ cup red cabbage shredded
  • ½ cup cucumber sliced
  • ½ cup mango cubed
  • ½ cup edamame
  • ½ cup carrot shredded
  • ½ cup avocado cubed
  • ¼ cup radish sliced

Directions :

  1. Add shrimp to a bowl and season with salt, lime juice, and jalapenos. Set aside to marinate.
  2. Add mayo, lime juice, garlic powder, and sriracha to a bowl and stir to combine.
  3. Heat the olive oil in a pan over medium-high heat.
  4. Remove the shrimp from the marinade and add it to the hot frying pan. Sear 2-3 minutes on each side until the shrimp turns pink.
  5. Add a layer of rice to the bottom of your bowl. Top it with red cabbage, cucumber edamame, mango, carrot, radish, and avocado.
  6. Top this quick poke bowl with the shrimp, serve with a drizzle of spicy mayo, and enjoy!
