
Shrimp Fajitas

Ingredients :
- 1 pound of fresh or frozen shrimp peeled and deveined
- 3 bell peppers sliced
- 1 large onion sliced
- 2 tablespoons of fajita seasoning
- 8 small flour tortillas
Directions :
- Heat a large skillet over medium-high heat. Add a little oil if needed.
- Add the bell peppers and onions to the skillet. Sauté until they're tender and slightly charred.
- Add the shrimp to the skillet and sprinkle the fajita seasoning over everything. Stir well to make sure everything is evenly coated.
- Cook until the shrimp are pink and fully cooked. This should take about 2-3 minutes.
- Warm the tortillas in the oven or on the stovetop.
- Assemble the fajitas by adding the shrimp and veggie mix to the center of each tortilla. Roll up and serve immediately.
