Shrimp and Polenta

When a hot and fulfilling meal seems impossible, this quick and easy Italian shrimp and polenta recipe is the perfect option. This creamy dish features a simple list of ingredients and is ready in 15 minutes. It couldn't be any easier to whip up an impressive, flavorful, and fulfilling meal

Ingredients :

  • 4 cups water
  • 1 cup coarse cornmeal
  • ½ teaspoon salt
  • 2 tablespoons butter
  • ¼ cup parmesan cheese shredded
  • ¼ cup olive oil
  • 1 pound large shrimp cleaned and deveined
  • 1 cup cherry tomatoes
  • 2 tablespoons white onion chopped
  • 2 tablespoons garlic minced
  • 1 teaspoon red chili flakes
  • 2 tablespoons lemon juice
  • 1 cup capers
  • 6 leaves fresh basil

Directions :

  1. Bring the water to a boil over medium-high heat.
  2. Turn off the heat and slowly stir in the cornmeal until it has formed a thick paste.
  3. Mix in salt, butter, and parmesan cheese, and set aside.
  4. Heat your oil in a large skillet over medium-high heat.
  5. Add the shrimp and cook for 1-2 minutes until they start to turn pink.
  6. Mix in your cherry tomatoes, onion, garlic, red chili flakes, lemon juice, and capers.
  7. Add salt to taste and cook until the tomatoes and onion have softened.
  8. Add basil and cook until aromatic, approximately 30 seconds to 1 minute.
  9. Spoon a portion of the shrimp onto a bed of polenta.
  10. Serve with a sprinkling of fresh parmesan, and enjoy!
