Shrimp And Chicken Fried Rice

Shrimp and Chicken Fried Rice made with day-old rice, soy sauce, and fresh ingredients. A quick and flavorful one-pan meal ready in 25 minutes.

Ingredients :

  • 3 cups cooked rice preferably day-old
  • 1 cup shrimp peeled and deveined
  • 1 cup cooked chicken breast diced
  • 2 eggs lightly beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil or vegetable oil
  • ½ cup green onions chopped
  • ½ cup frozen peas and carrots thawed
  • 2 cloves garlic minced
  • Salt and pepper to taste

Directions :

  1. Heat 1 tablespoon of sesame oil in a large pan or wok over medium heat. Cook the shrimp until pink, about 2-3 minutes per side. Remove and set aside.
  2. Add another tablespoon of sesame oil and sauté the garlic until fragrant. Add the diced chicken and cook for 2-3 minutes. Remove and set aside.
  3. In the same pan, scramble the eggs until just cooked. Push to the side of the pan.
  4. Add the cooked rice to the pan, breaking up any clumps. Stir in soy sauce, peas, and carrots. Mix everything well.
  5. Add the shrimp, chicken, and green onions. Toss until everything is heated through. Season with salt and pepper to taste.
  6. Serve hot, garnished with extra green onions if desired.
