Pesto Chicken Pasta

One pot meal of al dente pasta with chicken breast and spices in only 10 minutes. The perfect dinner in the Instant Pot!

Ingredients :

  • 2 tablespoon olive oil
  • 2 chicken breasts cubed
  • 3 cloves garlic minced
  • ½ red onion chopped
  • 4 cups chicken broth
  • 1 lb rotini pasta uncooked
  • 1 cup basil pesto
  • 1 cup peas fresh or frozen
  • 1 cup spinach
  • ½ cup parmesan cheese grated

Directions :

  1. Press "saute" and add olive oil.
  2. Add chicken and saute for 3 minutes.
  3. Add onion and garlic and saute for 1 more minute.
  4. Add chicken broth and pasta and stir.
  5. Close the lid and cook on high pressure for 4 minutes.
  6. When cooking time is complete, do a quick pressure release and open the lid.
  7. Add pesto and peas and stir well.
  8. Add spinach and cheese and stir well.
  9. Serve and enjoy
