Ingredients :

  • 4 cloves garlic
  • ½ white onion sliced
  • ½ red bell pepper sliced
  • ¼ cup mixed spices
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper
  • 1 tablespoon peri-peri sauce
  • ¼ cup olive oil
  • ½ lime juice
  • 2 ½ - 3 pounds chicken

Directions :

  1. Add the garlic, onion, bell pepper, mixed spices, salt, pepper, peri-peri sauce, olive oil, and lime juice to a food processor and grind into a paste.
  2. Coat the chicken evenly in your peri-peri paste.
  3. Put the chicken in the fridge to marinate for 2 hours.
  4. Place the marinated chicken on a parchment-lined baking sheet.
  5. Bake for 40 minutes at 350F.
  6. Serve with fresh chopped herbs, and enjoy!
