
Panko Crusted Cod

Ingredients :
- 4 cod fillets
- 1 cup panko breadcrumbs
- 2 eggs beaten
- ½ cup flour
- ¼ cup olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder optional
- 1 teaspoon paprika optional
- Lemon wedges for serving
Directions :
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season the flour with salt, pepper, garlic powder, and paprika.
- Dredge each cod fillet in the flour, shaking off excess.
- Dip the fillets in the beaten eggs, then coat with panko breadcrumbs, pressing firmly to adhere.
- Place the coated fillets on the prepared baking sheet. Drizzle with olive oil.
