Mushroom Risotto

Make dinner special with this Instant Pot mushroom risotto. Creamy, rich, and loaded with mushrooms, it’s a one-pot meal that’s quick and easy to prepare.

Ingredients :

  • 4 tablespoon butter divided and unsalted
  • 3 cloves garlic minced
  • 1 onion diced
  • 8 ounces mushrooms thinly sliced
  • 2 cup chicken broth or vegetable broth
  • 1 cup arborio rice
  • ¼ teaspoon thyme dried
  • 2 cup baby spinach
  • ¾ cup peas frozen
  • ¼ cup Parmesan freshly grated

Directions :

  1. In Instant Pot, press saute and add 2 tablespoon of butter.
  2. Add onion and garlic and saute for 3 minutes.
  3. Add mushrooms, salt and pepper and saute for 3 more minutes.
  4. Stir in chicken broth, rice and thyme.
  5. Close the lid and cook on high pressure for 6 minutes.
  6. When cooking time is complete, do a quick pressure release and press saute.
  7. Add 2 tablespoon of butter and spinach and saute for 2 minutes.
  8. Add peas and parmesan and saute for 1 more minute.
  9. Serve and enjoy
