Morning Glory Muffins
Morning glory muffins are the perfect way to start your day. Ingredients :
- 1 ¼ cups whole wheat flour
- ½ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 2 large eggs
- ⅓ cup vegetable oil or melted coconut oil
- ½ cup brown sugar
- ¼ cup applesauce
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1 apple grated or finely diced
- ⅓ cup shredded coconut
- ⅓ cup raisins
Directions :
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
- In a separate bowl, beat the eggs, oil, brown sugar, applesauce, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined.
- Fold in the grated carrots, apple, shredded coconut, and raisins.
- Divide the batter evenly among the muffin cups, filling each about ¾ full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
