Mexican Rice

This simple and delicious rice dish is infused with authentic Mexican flavors.

Ingredients :

  • 1½ cups rice long grain
  • 1 ¾ cups water or broth
  • ½ cup peas
  • ¼ cup tomato sauce
  • 3 tablespoon canola oil
  • ½ teaspoon garlic powder
  • 1 carrot diced
  • 1 teaspoon onion powder
  • salt to taste
  • 1 teaspoon cumin powder optional

Directions :

  1. Rinse and drain the rice.
  2. Pour oil into your Instant Pot and press “Sauté”.
  3. Add rice and stir for about 4 minutes, until it becomes light golden.
  4. Add peas, carrots, tomato sauce, garlic and onion.
  5. Add water, broth and salt to taste and stir well.
  6. Close the lid and cook on high pressure for 4 minutes.
  7. When cooking time ends, wait for a natural release.
  8. Once done, remove the lid and fluff the rice using fork.
  9. Serve and enjoy
