
Mango Muffins
Mango muffins are a delicious and easy way to enjoy the sweet, tropical flavor of mangoes. These muffins are soft, moist, and filled with juicy pieces of mango, making them perfect for breakfast, a snack, or even dessert.
Ingredients :
- 1 ½ cups diced mango
- 2 cups flour
- ¾ cup sugar
- ½ cup butter melted
- 2 large eggs
- ½ cup milk
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Directions :
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- In another bowl, mix the melted butter, sugar, eggs, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced mango.
- Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
