Ingredients :
- 4 bone-in or boneless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 lemon juice and zest
- 2 teaspoons fresh rosemary chopped
- 3 garlic cloves minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika optional, for color
- ¼ teaspoon red pepper flakes optional, for spice
- ½ cup chicken broth or water
Directions :
- Marinate the Chicken: In a bowl, mix olive oil, lemon juice, zest, rosemary, garlic, salt, pepper, and paprika. Coat the chicken evenly and let it sit for at least 30 minutes (or overnight for best flavor).
- Cook the Chicken: Heat a large pan over medium heat. Add a little olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
- Add Liquid & Simmer: Pour in the chicken broth, cover, and let simmer for 15-20 minutes until the chicken is fully cooked (165°F internal temperature).
- Serve & Enjoy: Let the chicken rest for 5 minutes, then serve with your choice of sides.
