Ingredients :

  • 4 bone-in or boneless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 lemon juice and zest
  • 2 teaspoons fresh rosemary chopped
  • 3 garlic cloves minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika optional, for color
  • ¼ teaspoon red pepper flakes optional, for spice
  • ½ cup chicken broth or water

Directions :

  1. Marinate the Chicken: In a bowl, mix olive oil, lemon juice, zest, rosemary, garlic, salt, pepper, and paprika. Coat the chicken evenly and let it sit for at least 30 minutes (or overnight for best flavor).
  2. Cook the Chicken: Heat a large pan over medium heat. Add a little olive oil and sear the chicken for 3-4 minutes on each side until golden brown.
  3. Add Liquid & Simmer: Pour in the chicken broth, cover, and let simmer for 15-20 minutes until the chicken is fully cooked (165°F internal temperature).
