Lemon Ricotta Pasta

Lemon ricotta pasta is creamy, light, and full of fresh flavors. A quick and easy meal ready in 25 minutes, perfect with grilled chicken or roasted veggies!

Ingredients :

  • 8 oz pasta spaghetti, fettuccine, or penne
  • ½ cup ricotta cheese
  • 1 lemon zest and juice
  • 1 clove garlic minced
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes optional
  • ¼ cup reserved pasta water as needed
  • Fresh basil or parsley for garnish optional

Directions :

  1. Cook the pasta according to package instructions. Reserve ¼ cup of the pasta water, then drain and set aside.
  2. In a pan over low heat, warm the olive oil and sauté the minced garlic until fragrant.
  3. In a bowl, mix ricotta cheese, lemon zest, lemon juice, salt, black pepper, and red pepper flakes.
  4. Add the cooked pasta to the pan and mix in the ricotta sauce, stirring gently.
  5. If the sauce is too thick, add a little reserved pasta water until creamy.
  6. Remove from heat and garnish with fresh basil or parsley.
  7. Serve immediately and enjoy!
