
Lemon Ricotta Pasta
Lemon ricotta pasta is creamy, light, and full of fresh flavors. A quick and easy meal ready in 25 minutes, perfect with grilled chicken or roasted veggies!
Ingredients :
- 8 oz pasta spaghetti, fettuccine, or penne
- ½ cup ricotta cheese
- 1 lemon zest and juice
- 1 clove garlic minced
- 2 tablespoons olive oil
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes optional
- ¼ cup reserved pasta water as needed
- Fresh basil or parsley for garnish optional
Directions :
- Cook the pasta according to package instructions. Reserve ¼ cup of the pasta water, then drain and set aside.
- In a pan over low heat, warm the olive oil and sauté the minced garlic until fragrant.
- In a bowl, mix ricotta cheese, lemon zest, lemon juice, salt, black pepper, and red pepper flakes.
- Add the cooked pasta to the pan and mix in the ricotta sauce, stirring gently.
- If the sauce is too thick, add a little reserved pasta water until creamy.
- Remove from heat and garnish with fresh basil or parsley.
- Serve immediately and enjoy!
