Lemon Muffins

Lemon muffins are soft, fluffy, and full of bright citrus flavor. They are easy to make and perfect for breakfast, a snack, or dessert. The fresh lemon juice and zest give them a refreshing taste, while butter or oil keeps them moist.

Ingredients :

  • 1 ½ cups all-purpose flour
  • ¾ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • ½ cup melted butter or oil
  • ½ cup milk or dairy-free alternative
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Directions :

  1. Preheat the Oven: Set to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In another bowl, whisk eggs, melted butter, milk, lemon juice, lemon zest, and vanilla extract.
  4. Combine: Slowly add dry ingredients to wet ingredients and stir until just combined (do not overmix).
  5. Fill Muffin Cups: Divide the batter evenly among the muffin liners, filling each about ¾ full.
  6. Bake: Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve: Let muffins cool for 5 minutes before transferring to a wire rack. Enjoy warm or store for later.
