Instant Spanish Pork Stew

Ingredients :

  • 2 tablespoon olive oil
  • 2 cloves garlic minced
  • 5 tomatoes chopped
  • 3 potatoes diced
  • 2 onions chopped
  • 2 parsnips diced
  • 2 carrots diced
  • 1 lb pork shoulder cut into cubes
  • 2 bay leaves
  • 1½ cup beef stock
  • salt and pepper to taste

  2. Press “Sauté” and pour oil into the Instant Pot.
  3. Add garlic, vegetables and bay leaves and saute for 2 minutes.
  4. Add pork cubes and saute for another 2 minutes while stirring, until they are browned on each side.
  5. Add beef stock, salt and pepper and stir well.
  6. Close the lid and cook at high pressure for 40 minutes.
  7. When cooking time is complete, wait for a natural pressure release.
  8. Serve and enjoy
