
Instant Spanish Pork Stew

Ingredients :
- 2 tablespoon olive oil
- 2 cloves garlic minced
- 5 tomatoes chopped
- 3 potatoes diced
- 2 onions chopped
- 2 parsnips diced
- 2 carrots diced
- 1 lb pork shoulder cut into cubes
- 2 bay leaves
- 1½ cup beef stock
- salt and pepper to taste

- Press “Sauté” and pour oil into the Instant Pot.
- Add garlic, vegetables and bay leaves and saute for 2 minutes.
- Add pork cubes and saute for another 2 minutes while stirring, until they are browned on each side.
- Add beef stock, salt and pepper and stir well.
- Close the lid and cook at high pressure for 40 minutes.
- When cooking time is complete, wait for a natural pressure release.
