Instant Birria Tacos

Instant Pot Birria Tacos is the best way to kick off Taco Tuesday. (or any night of the week that you're craving tender and delicious tacos!) This easy birria taco recipe proves that tacos don't have to be complicated to be awesome.

Ingredients :

  • ½ onion chopped
  • 5 garlic cloves minced
  • 3 guajillo chilies seeds removed
  • 3 ancho chilies seeds removed
  • 2 tablespoon olive oil
  • 1 tablespoon cinnamon
  • 1 tablespoon coriander
  • 1 tablespoon oregano
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • 1 teaspoon cumin
  • 1 cinnamon stick
  • 3 bay leaves
  • 2 cups chicken stock
  • 2 tsp apple cider vinegar
  • 2 teaspoon tomato paste
  • 1½ pounds beef roast
  • 3 corn tortillas

Directions :

  1. Add olive oil to the Instant Pot and then add garlic, onion and chilies.
  2. Press the saute button and saute for 8 minutes.
  3. Add in the rest of the dry ingredients and stir.
  4. Put in the chicken stock, vinegar, and tomato paste.
  5. Add the beef roast into the Instant Pot and put on the lid.
  6. Cook on high pressure for 45 minutes.
  7. When cooking time is complete, do a quick release
  8. Remove the beef and keep aside.
  9. Take out the peppers, leaving just the liquid and add in the tortillas. Saute for 3 minutes.
  10. Empty the Inner Pot. Add in olive oil, and saute the tortillas again for 3 minutes.
  11. Shred the beef roast, add to the tortillas, add toppings, and enjoy.
