Fried Shrimp

Juicy shrimp with a crispy touch, served over perfectly cooked mushrooms, makes for a meal that feels fancy but is super easy to make.

Ingredients :

  • 2 tablespoons butter
  • ½ cup onions chopped
  • 1 tablespoon garlic diced
  • ½ cup shiitake mushrooms sliced
  • 1½ cup white mushrooms sliced
  • ½ lb scallops
  • ¼ cup hoisin sauce for the air fryer basket
  • ½ cup white wine
  • ⅓ cup soy sauce
  • 2 tablespoons lemon juice
  • 1 salt and pepper to taste
  • 1 lb shrimp fritters

Directions :

  1. Add butter, onions, and garlic to your Instant Pot and saute for 10 minutes, stirring occasionally.
  2. Add mushrooms, scallops, hoisin sauce, white wine, soy sauce, lemon juice, salt, and pepper. Stir to incorporate.
  3. Close the lid and cook on high pressure for 5 minutes.
  4. Wait for a natural pressure release (or for at least 20 minutes). Once done, open the lid and set cooked mushrooms and scallops aside.
  5. Insert the air fryer basket and add shrimp fritters.
  6. Air Fry at 320 °F for 6 minutes.
  7. Plate your mushroom and scallop mixture, then top with your shrimp fritters.
  8. Serve and enjoy
