Fried Brown Rice

Quick and nutritious fried brown rice recipe packed with veggies, flavorful soy sauce, and eggs; perfect for a main dish or a complementary side!

Ingredients :

  • 2 cups day-old brown rice
  • 2 tablespoons vegetable oil
  • 2 eggs beaten
  • 1 cup mixed vegetables like carrots, peas, bell peppers, and broccoli, chopped
  • 3 tablespoons soy sauce
  • 2 green onions sliced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Optional: Protein of choice chicken, beef, shrimp, tofu

Directions :

  1. In a large pan or wok, heat the vegetable oil over medium-high heat.
  2. Add garlic and stir until fragrant.
  3. Push garlic to the side, add the eggs and scramble until just set.
  4. Add in the mixed vegetables and stir fry until they're tender.
  5. Push everything to the side, add a bit more oil if needed, and then add the rice. Let it fry for a few minutes until it's hot.
  6. Pour the soy sauce over the rice and mix everything together.
  7. Add in your protein of choice if using, and stir fry until cooked through.
  8. Season with salt and pepper to taste.
  9. Finish with green onions, stir, and serve.
