Fish Stew

If you've been looking for a hearty and healthy meal to keep you warm this winter, you might want to try this delicious Instant Pot fish stew that is loaded with nutritious vegetables and delicious fish.

Ingredients :

  • 4 cloves garlic Chopped
  • ½ white onion Sliced
  • ¼ lb potatoes Peeled and chopped
  • ¼ lb carrots Peeled and Chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • ½ cup white wine
  • 2 cups fish broth
  • 1 ½ cups water
  • ½ teaspoon paprika
  • 1 teaspoon salt Season to taste
  • 1 teaspoon pepper Season to taste
  • 1 cup coconut milk
  • 2 lbs white fish fillets
  • 2 tablespoons fresh parsley Chopped

Directions :

  1. Set your Instant Pot to "saute". Add olive oil and onions. Saute for 3 minutes
  2. Add garlic and saute for another minute.
  3. Add in the white wine and saute for an additional minute. Scrape the brown caramelized bits off the bottom of the pot.
  4. Hit "cancel" the add your fish broth, water, carrots, potatoes, diced tomatoes, smoked paprika, salt, and pepper to the Instant Pot. Stir to incorporate. Put the lid on your Instant Pot and pressure cook on high pressure for 5 minutes.
  5. Do a quick release and carefully remove the lid, taking care to avoid the steam. Activate "saute" mode again then stir in coconut milk.
  6. Add fish fillets and saute for 5 minutes.
  7. Add lemon juice and stir well
