Crawfish Boil
Welcome to a classic Southern tradition – the crawfish boil! This communal feast is about more than just good food. Ingredients :
- 10 pounds live crawfish
- 4 pounds small red potatoes
- 2 pounds smoked sausage cut into 1-inch pieces
- 10 earsof corn halved
- 2 cups of Cajun seasoning
- Salt to taste
Directions :
- Rinse the crawfish thoroughly in fresh water until the water runs clear.
- Fill a large pot with water, add the Cajun seasoning and salt, and bring to a boil.
- Add the potatoes to the pot and cook for about 10 minutes until they start to soften.
- Next, add the smoked sausage and continue boiling for another 5 minutes.
- Add the corn and boil for an additional 5 minutes.
- Finally, add the crawfish and cook for about 5 minutes, or until they turn bright red.
- Drain the water from the pot, and spread the contents out on a table for serving.
