
Cranberry Orange Muffins

Ingredients :
- 1 ¾ cups all-purpose flour
- 1 cup fresh cranberries chopped
- ⅔ cup sugar
- ⅓ cup melted butter or vegetable oil
- ½ cup fresh orange juice
- 1 tablespoon orange zest
- 2 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup milk
- 1 large egg
Directions :
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, combine melted butter or oil, orange juice, orange zest, milk, and egg. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Do not overmix.
- Fold in the cranberries gently.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about ⅔ full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
