Cranberry Chicken

Chicken thighs with cranberries is a flavorful and comforting dish that’s perfect for any occasion. Juicy chicken thighs are cooked in a sweet and tangy cranberry sauce with a hint of citrus and fresh herbs. This dish is easy to make but looks and tastes impressive, making it ideal for both weeknight dinners and special occasions.

Ingredients :

  • 4 bone-in chicken thighs or boneless, skin-on
  • 1 cup fresh cranberries or ½ cup dried, soaked cranberries
  • ⅓ cup orange juice
  • 2 tablespoon honey
  • 1 tablespoon olive oil
  • 2 garlic cloves minced
  • 1 teaspoon fresh rosemary or ½ teaspoon dried
  • Salt and pepper to taste

Directions :

  1. Season the chicken thighs with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté garlic until fragrant. Add cranberries, orange juice, honey, and rosemary. Stir and cook for 2-3 minutes until the cranberries start to soften.
  4. Return the chicken thighs to the skillet, spooning some of the sauce over them. Cover and simmer on low heat for 20 minutes, or until the chicken is cooked through.
  5. Remove the lid and simmer for an additional 2-3 minutes to thicken the sauce if needed.
  6. Serve warm, garnished with fresh rosemary or orange zest if desired.
