
Cottage Cheese Egg Bites
Cottage cheese egg bites are soft, fluffy, and full of protein. They are made with simple ingredients like eggs, cottage cheese, and shredded cheese, and you can add veggies like spinach for extra flavor and nutrition. These egg bites are great for a quick breakfast, lunch, or snack.
Ingredients :
- 4 large eggs
- ½ cup cottage cheese
- ½ cup shredded cheese cheddar, mozzarella, or mix
- ¼ cup chopped spinach fresh or frozen, thawed
- Salt and pepper to taste
- Optional: chopped onions bell peppers, cooked bacon or ham
Directions :
- Preheat oven to 350°F (175°C).
- In a blender or bowl, mix eggs, cottage cheese, shredded cheese, spinach, salt, and pepper.
- Grease a muffin tin or use silicone liners.
- Pour the mixture evenly into the cups, filling about ¾ full.
- Bake for 18–22 minutes, or until the centers are set.
- Let cool for a few minutes, then remove and serve.
