Corned Beef Hash

Ingredients :

  • 2 potatoes cooked and peeled
  • ½ onion
  • 1 can corned beef
  • 3 tablespoons butter unsalted
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • fresh parsley for serving. optional
  • sunny side up eggs for serving. optional

Directions :

  1. Dice potatoes and onion. Set aside.
  2. Heat a pan over medium-high heat and add butter to melt.
  3. Add onions and cook for 1-2 minutes, until the onions are softened and slightly opaque, then mix in the potatoes and corned beef.
  4. Add salt, pepper, thyme, garlic powder and combine.
  5. Continue to cook for 5 minutes.
  6. Garnish with fresh parsley, add sunny side up eggs and serve
