Cilantro Lime Chicken

Crispy on the outside, juicy on the inside, and loaded with fresh flavor! This pan-fried Cilantro Lime Chicken comes together in only 15 minutes, with a simple marinade that brings out all the best citrusy, garlicky goodness.

Ingredients :

  • 6 chicken thighs boneless, skinless
  • 5 tablespoons olive oil divided
  • ¼ cup lime juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon oregano
  • 1 teaspoon ground coriander
  • 4 cloves garlic minced
  • ¼ cup fresh cilantro chopped

Directions :

  1. Add your chicken to a bowl and top with 3 tablespoons of olive oil, lime juice, salt, pepper, red pepper flakes, oregano, coriander, garlic, and cilantro.
  2. Toss the chicken to coat evenly with the mixture.
  3. Heat 2 tablespoons of olive oil in a pan over medium-high heat.
  4. Add the chicken thighs to the hot pan and cook for 3-5 minutes to achieve a nice sear.
  5. Baste the thighs with the excess cilantro lime marinade and flip them to sear on the other side.
