Chimichurri Sauce

Transfer parsley mixture to a medium bowl and stir in oil, vinegar, lemon zest (if using), and red pepper; season with salt.

Ingredients :

  • 1 cup firmly packed fresh flat-leaf parsley
  • 3 cloves garlic
  • 2 Tbsp. fresh oregano
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup red wine vinegar
  • 2 tsp. finely grated lemon zest
  • Pinch of red pepper flakes
  • Kosher salt

Directions :

  1. In a food processor, pulse parsley, garlic, and oregano until herbs and garlic are finely chopped. (This can also be done by hand with a chef's knife.)
  2. Transfer parsley mixture to a medium bowl and stir in oil, vinegar, lemon zest (if using), and red pepper; season with salt.
