Chicken Sorrentino is a classic Italian-American dish that combines tender chicken breasts, savory eggplant, salty prosciutto, and creamy mozzarella cheese, all layered in a rich marinara sauce. This hearty and flavorful dish is perfect for family dinners or special occasions.

Ingredients :

  • 4 chicken breasts pounded to even thickness
  • 1 large eggplant sliced
  • 8 slices prosciutto
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce
  • ½ cup grated Parmesan cheese
  • ½ cup flour for dredging
  • 2 eggs beaten
  • Olive oil for frying
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Directions :

  1. Preheat oven to 375°F (190°C).
  2. Salt the eggplant slices and let them sit for 30 minutes, then pat dry.
  3. Dredge the chicken breasts in flour, dip in beaten eggs, and then fry in olive oil until golden brown. Set aside.
  4. In the same pan, fry the eggplant slices until golden.
  5. In a baking dish, layer chicken breasts, prosciutto slices, eggplant, and marinara sauce. Top with mozzarella and Parmesan cheese.
  6. Bake for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish with fresh basil if desired and serve hot.
