Chicken Sorrentino
Chicken Sorrentino is a classic Italian-American dish that combines tender chicken breasts, savory eggplant, salty prosciutto, and creamy mozzarella cheese, all layered in a rich marinara sauce. This hearty and flavorful dish is perfect for family dinners or special occasions.
Ingredients :
- 4 chicken breasts pounded to even thickness
- 1 large eggplant sliced
- 8 slices prosciutto
- 1 cup shredded mozzarella cheese
- 2 cups marinara sauce
- ½ cup grated Parmesan cheese
- ½ cup flour for dredging
- 2 eggs beaten
- Olive oil for frying
- Salt and pepper to taste
- Fresh basil for garnish optional
Directions :
- Preheat oven to 375°F (190°C).
- Salt the eggplant slices and let them sit for 30 minutes, then pat dry.
- Dredge the chicken breasts in flour, dip in beaten eggs, and then fry in olive oil until golden brown. Set aside.
- In the same pan, fry the eggplant slices until golden.
- In a baking dish, layer chicken breasts, prosciutto slices, eggplant, and marinara sauce. Top with mozzarella and Parmesan cheese.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Garnish with fresh basil if desired and serve hot.
