Chicken Fried Rice

You will love how quick and easy this chicken fried rice is. Ready and on your dinner table in just 15 minutes!

Ingredients :

  • 2 tablespoons olive oil
  • 3 chicken breasts cubed
  • 1 teaspoon kosher salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons sesame oil divided
  • 1 white onion diced
  • 2 carrots diced
  • 1 tablespoon fresh ginger grated
  • 3 cloves garlic minced
  • 1 cup rice cooked
  • 3 eggs
  • 3 tablespoons soy sauce
  • 3 green onions chopped
  • 2 teaspoons fresh cilantro optional

Directions :

  1. Add oil to a large pan or wok over medium-high heat. Once hot, add the chicken and sautee for 3-5 minutes. Add salt and pepper to taste, then cook for 3-5 minutes until the chicken is browned on all sides. Remove chicken and set aside.
  2. Add sesame oil to the hot pan, reserving half for later. Add onion and carrot. Sautee until soft and aromatic.
  3. Add ginger and garlic, stir to incorporate, and cook until aromatic.
  4. Gently mix in rice and cook until heated through.
  5. Clear some space on the bottom of your pan, add eggs, and carefully scramble them, taking care to avoid mixing the eggs with the rest of the rice mixture.
  6. Once the eggs have been thoroughly cooked, carefully mix to incorporate.
  7. Add the chicken back into the pan with soy sauce, green onion, and the remaining sesame oil. Stir to combine.
  8. Top with fresh cilantro, serve, and enjoy
