
Chicken Fried Rice
You will love how quick and easy this chicken fried rice is. Ready and on your dinner table in just 15 minutes!
Ingredients :
- 2 tablespoons olive oil
- 3 chicken breasts cubed
- 1 teaspoon kosher salt to taste
- 1 teaspoon black pepper to taste
- 2 tablespoons sesame oil divided
- 1 white onion diced
- 2 carrots diced
- 1 tablespoon fresh ginger grated
- 3 cloves garlic minced
- 1 cup rice cooked
- 3 eggs
- 3 tablespoons soy sauce
- 3 green onions chopped
- 2 teaspoons fresh cilantro optional
Directions :
- Add oil to a large pan or wok over medium-high heat. Once hot, add the chicken and sautee for 3-5 minutes. Add salt and pepper to taste, then cook for 3-5 minutes until the chicken is browned on all sides. Remove chicken and set aside.
- Add sesame oil to the hot pan, reserving half for later. Add onion and carrot. Sautee until soft and aromatic.
- Add ginger and garlic, stir to incorporate, and cook until aromatic.
- Gently mix in rice and cook until heated through.
- Clear some space on the bottom of your pan, add eggs, and carefully scramble them, taking care to avoid mixing the eggs with the rest of the rice mixture.
- Once the eggs have been thoroughly cooked, carefully mix to incorporate.
- Add the chicken back into the pan with soy sauce, green onion, and the remaining sesame oil. Stir to combine.
- Top with fresh cilantro, serve, and enjoy
