
Chicken Francese
Chicken Francese is a classic Italian-American dish featuring tender chicken cutlets coated in a light egg batter and simmered in a buttery lemon sauce. It’s simple to make yet packed with vibrant flavors, making it perfect for both casual dinners and special occasions.
Ingredients :
- 4 chicken breasts pounded thin
- 2 large eggs
- ½ cup all-purpose flour
- ¼ cup lemon juice about 2 lemons
- 1 cup chicken broth
- 3 tablespoons butter
- 2 tablespoons olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: chopped parsley for garnish
Directions :
- Season the chicken with salt and pepper. Dredge each piece in flour, then dip in beaten eggs to coat.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Cook the chicken for 3–4 minutes on each side until golden. Remove and set aside.
- In the same skillet, add lemon juice, chicken broth, and remaining butter. Stir and simmer for 2–3 minutes to reduce slightly.
- Return the chicken to the skillet and simmer for another 3–4 minutes, spooning the sauce over the chicken.
- Serve hot, garnished with parsley, alongside your favorite sides.
