Ingredients :

  • 2 boneless chicken breasts sliced into thin strips
  • 8 ounces pasta penne or fettuccine
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Optional: Red pepper flakes to taste

Directions :

  1. In a large pot of boiling salted water, cook pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once hot, add the chicken strips. Season with salt, pepper, and optional red pepper flakes. Cook until the chicken is golden and cooked through.
  3. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  4. Add spinach and sauté until wilted.
  5. Pour in the heavy cream and bring to a gentle simmer.
  6. Stir in the parmesan cheese until the sauce is smooth.
