
Buffalo Chicken Cucumber Roll

Ingredients :
- 3 cucumbers cut into ribbons
- ½ cup cream cheese
- 4 stalks celery julienned
- 1 cup lettuce
- 2 cups shredded chicken
- 1 avocado sliced
- 2-3 tablespoons fresh cilantro chopped
- 4 tablespoons buffalo sauce
- 4 tablespoons ranch dressing
Directions :
- Lay the cucumbers vertically across your sushi mat.
- Spread the cream cheese evenly across the cucumber.
- Lay some celery horizontally across the top of the cucumber. Follow that up with a layer of lettuce, then chicken, avocado, and cilantro.
- Finish with a drizzle of buffalo sauce and a drizzle of ranch dressing.
- Tightly roll the contents towards you, and slice into smaller rolls, roughly 1-2" thick.
- Serve your healthy buffalo chicken roll with more ranch for dipping, and enjoy!
