
Bran Muffins
Bran muffins are a simple, healthy, and tasty way to start your day. They’re made with wheat bran, which is full of fiber and keeps you full for longer. These muffins are slightly sweet, soft, and perfect for breakfast or a quick snack.
Ingredients :
- 1 cup wheat bran
- 1 cup whole wheat flour
- ½ cup brown sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon cinnamon optional
- 1 cup milk dairy or non-dairy
- 2 eggs
- ⅓ cup vegetable oil or melted butter
- 1 teaspoon vanilla extract
- ½ cup raisins or nuts optional
Directions :
- Preheat oven to 375°F (190°C). Line or grease a muffin tin.
- In a large bowl, mix bran and milk. Let sit for 5–10 minutes.
- Add eggs, oil, vanilla, and brown sugar to the bran mixture. Stir well.
- In another bowl, mix flour, baking soda, baking powder, salt, and cinnamon.
- Combine wet and dry ingredients, stir until just mixed. Fold in raisins or nuts if using.
- Divide the batter into the muffin cups.
- Bake for 18–20 minutes, or until a toothpick comes out clean.
- Cool for a few minutes, then enjoy warm or store for later.
