Ingredients :

  • 1 cup fusilli pasta
  • 1 tablespoon olive oil
  • 1 pound beef tenderloin sliced
  • 3 tablespoons butter
  • 2 cups broccoli florets
  • 1 white onion sliced
  • 2 cups mushrooms sliced
  • 1 tablespoon garlic
  • 3 tablespoons flour
  • ½ cup milk
  • 1 teaspoon thyme
  • ½ teaspoon ground mustard
  • ½ teaspoon black pepper
  • 1 tablespoon salt
  • 1-2 tablespoons cheddar cheese shredded
  • 1-2 teaspoons chives

Directions :

  1. Prepare the pasta according to the directions on the package.
  2. Over medium heat, add olive oil to a pot. Once the pot is hot, add the beef. Once browned on both sides, remove the beef and set aside.
  3. Add 1 tablespoon of butter, broccoli, onions, mushrooms, and garlic to the drippings and stir to coat. Cook until the vegetables have softened and the onions become opaque.
  4. Remove the vegetables from the heat and set aside. Add 2 tablespoons of butter to your pot along with the flour and stir to incorporate until you have a paste. Slowly stir in milk and bring to a simmer.
  5. Add thyme, ground mustard, and black pepper and stir to incorporate.
  6. Place your cooked beef and vegetables back into the pot with the mixture, add salt, and stir to incorporate. Bring to a boil, then remove from heat.
  7. Spoon beef stroganoff over cooked pasta. Garnish with shredded cheese and chives to taste.
  8. Serve while hot, and enjoy!
