Beef Barley Soup

Enjoy a hearty and comforting Beef Barley Soup that's easy to make. Perfect for cold nights and can be made in advance for added flavor.

Ingredients :

  • 1 pound beef cubed
  • 1 cup barley uncooked
  • 3 carrots sliced
  • 1 onion chopped
  • 6 cups beef broth
  • salt and pepper to taste
  • spices like thyme and bay leaf optional

Directions :

  1. Heat a pot and add a little oil.
  2. Brown the beef cubes. Remove and set aside.
  3. In the same pot, cook the onions until soft.
  4. Add carrots and cook for 2 minutes.
  5. Add the beef back in.
  6. Pour in the beef broth.
  7. Add the barley.
  8. Optional: Add spices like thyme and bay leaf.
  9. Let it simmer for 40-50 minutes or until barley is cooked.
  10. Add salt and pepper to taste.
