Asparagus Quiche is a delightful and elegant dish that combines tender asparagus with a creamy egg custard, all nestled in a flaky pie crust. It's the perfect recipe for when you want something special but not too complicated. This quiche is ideal for spring brunches, cozy breakfasts, or as a light dinner served with a side salad.

Ingredients :

  • 1 ready-to-bake pie crust 9-inch
  • 1 tablespoon olive oil
  • 1 pound asparagus trimmed and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup shredded Swiss cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: ½ teaspoon nutmeg or fresh herbs for extra flavor

Directions :

  1. Preheat your oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pie dish and gently prick the bottom with a fork. Blind bake the crust by covering it with parchment paper and pie weights or dried beans. Bake for 10 minutes, then remove from the oven.
  3. Heat olive oil in a skillet over medium heat. Add the asparagus and sauté until slightly tender, about 5-7 minutes. Set aside to cool.
  4. In a large bowl, whisk together eggs, heavy cream, salt, pepper, and optional nutmeg or herbs. Stir in the cooled asparagus and shredded cheese.
  5. Pour the egg mixture into the pre-baked pie crust. Bake for 25-30 minutes, or until the quiche is set and the top is lightly golden.
  6. Let the quiche cool for a few minutes before slicing and serving.
