Artichoke And Spinach Pasta

Creamy artichoke and spinach pasta is a comforting dish made with tender pasta, fresh spinach, and tangy artichoke hearts in a rich Parmesan cream sauce!

Ingredients :

  • 12 oz pasta fettuccine, penne, or spaghetti
  • 1 can 14 oz artichoke hearts, drained and chopped
  • 3 cups fresh spinach
  • 1 cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: crushed red pepper flakes and fresh basil for garnish

Directions :

  1. Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
  3. Add the artichoke hearts and cook for 2–3 minutes, stirring occasionally.
  4. Stir in the spinach and cook until wilted, about 1–2 minutes.
  5. Reduce the heat to low and add the cream, Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
  6. Toss the cooked pasta with the sauce, adding reserved pasta water as needed to reach your desired consistency.
  7. Serve hot, garnished with extra Parmesan, red pepper flakes, and fresh basil, if desired.
