
Artichoke And Spinach Pasta
Creamy artichoke and spinach pasta is a comforting dish made with tender pasta, fresh spinach, and tangy artichoke hearts in a rich Parmesan cream sauce!
Ingredients :
- 12 oz pasta fettuccine, penne, or spaghetti
- 1 can 14 oz artichoke hearts, drained and chopped
- 3 cups fresh spinach
- 1 cup heavy cream or half-and-half
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 3 garlic cloves minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: crushed red pepper flakes and fresh basil for garnish
Directions :
- Cook the pasta in salted boiling water until al dente. Reserve ½ cup of pasta water, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 1–2 minutes until fragrant.
- Add the artichoke hearts and cook for 2–3 minutes, stirring occasionally.
- Stir in the spinach and cook until wilted, about 1–2 minutes.
- Reduce the heat to low and add the cream, Parmesan cheese, salt, and pepper. Stir until the cheese is melted and the sauce is smooth.
- Toss the cooked pasta with the sauce, adding reserved pasta water as needed to reach your desired consistency.
- Serve hot, garnished with extra Parmesan, red pepper flakes, and fresh basil, if desired.
