Apricot Chicken

Apricot Chicken is a sweet and savory dish that’s easy to make and full of flavor. It’s made with just a few ingredients—chicken, apricot preserves, onion soup mix, and a bit of soy sauce. The sauce becomes sticky and delicious as it bakes, coating the chicken with a tasty glaze.

Ingredients :

  • 4 –6 boneless skinless chicken thighs
  • 1 cup apricot preserves
  • 1 packet dry onion soup mix
  • 2 tablespoons soy sauce
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Directions :

  1. Preheat oven to 375°F (190°C).
  2. Place chicken in a greased baking dish.
  3. Make sauce – In a bowl, mix apricot preserves, onion soup mix, soy sauce, and garlic.
  4. Pour sauce over the chicken and spread to coat evenly.
  5. Bake covered with foil for 30 minutes.
  6. Remove foil and bake for another 15 minutes until chicken is cooked through and sauce thickens.
  7. Serve hot with rice, veggies, or your favorite side. Garnish with parsley if using.
