Ingredients :

  • 2 cups almond flour
  • 3 eggs
  • ¼ cup honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • ¼ cup melted butter or coconut oil
  • ¼ cup milk or dairy-free alternative
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional

Directions :

  1. Preheat the Oven: Set to 350°F (175°C) and line a muffin tin with liners.
  2. Mix Dry Ingredients: In a bowl, whisk together almond flour, baking powder, salt, and cinnamon.
  3. Mix Wet Ingredients: In another bowl, whisk eggs, honey, melted butter, milk, and vanilla extract.
  4. Combine: Slowly add the dry ingredients to the wet ingredients and stir until just combined.
  5. Fill Muffin Cups: Divide the batter evenly among the muffin liners, filling each about ¾ full.
  6. Bake: Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
